We held a family bbq to celebrate my dad’s birthday today. Since my dad loves clam chowder, I attempted to make it from scratch. I was a bit nervous because the soup didn’t taste very flavorful until I added the final ingredient – red wine vinegar. That definitely did the trick! I was very happy with the outcome and so was my dad — he loved it!

I made southwestern pasta salad for a Spring Potluck at our office today. Back in the days, pasta salad was one of my fav’s. I haven’t made it in years, though, ever since I starting making a conscious effort to cut down on my carb intake. Don’t want to tempt myself! I decided the potluck would be a perfect opportunity to make it, considering I have been craving my homemade dish for awhile now.
The pasta salad was delicious, just how I remember it (except this time I used whole-wheat pasta). My co-workers also seemed to enjoy it; some even asked for the recipe — always a sign of success!

Recently, I came across a turkey chili recipe. I’m all about being healthy, so I tried it out hoping that it would satisfy my love of chili without racking up the calories.

Alvin decided to make some bruschetta for us. I know it’s not usually paired with chili, but it was delicious nonetheless!

The turkey chili definitely exceeded my expectations. YUM!
